Located between Saint Remy de Provence and Eygalières, this garden cultivated in the spirit of permaculture by Pierre-Louis Poize and his team, allows to supply the restaurant with fifty varieties of vegetables, fruits, edible flowers and herbs selected with care.

What is permaculture

Permaculture is a science and an ethic of designing and implementing resilient human ecosystems. Permaculture applies in particular to cropping systems, living places, and human farming systems using ecological principles and knowledge from traditional societies to replicate the diversity, stability and resilience of natural ecosystems.
It is a tool for the development of human sites or organizations that makes it possible to connect the different elements of a system that we want to create or improve in order to reduce the effort for the human being, to improve the use of energy in all its forms (waste must become resources), to work in cooperation with nature and not against it, to take a model on it (eg purification by plants), ... We pay attention to the sustainability of a system, its non-dangerousness to us and future generations, but also to its robustness (resilience) in the face of the vagaries of life (climate, diseases, ...). Permaculture, or rather the permacultural approach, helps to realize a sustainable development approach that integrates with the functioning of the planetary ecosystem. It helps us through a set of design principles and tools that make everyone free to make choices based on their context and abilities.
